Each 16-ounce package makes two batches and can be prepared as cornbread, muffins or a loaf. Just add egg, milk and vegetable oil or applesauce, then customize the batter with whole corn, jalapeños or other favorite additions. Directions:
Preheat oven to 400°F. Beat together 1 egg, 1/2 cup milk and 2 tablespoons vegetable oil or applesauce. Add 1 1/4 cups muffin mix and combine gently using 10–20 strokes.
For Six Muffins: Pour batter into 6 greased muffin wells and bake 10–12 minutes, or until done.
For Bread: Pour batter into a greased 4 1/2 × 8 1/2-inch loaf pan and bake 15–18 minutes, or until done.
Variation: Add 1/2 cup whole corn to the batter.
