  1. Prepare your smoker or oven to 250 degrees (Note: if using a smoker outside, use hickory or pecan wood or pellets!)

  2. Take your jalapeños and slit length wise and then cut a "T" at the top. Do not cut all the way through!

  3. Set the jalapeños aside for a few minutes and get aluminum foil and make a boat out of the aluminum foil and place the block of cream cheese inside the boat!

  4. Take the jalapeños and the boat of cream cheese and place on the smoker. Smoke or cook the jalapeños for 30 minutes. Smoke or cook the cream cheese in the boat, for 75 minutes.

  5. Remove the jalapeños, after the 30 minutes and realize they are far more pliable alter being smoked!

  6. Be sure your cup or two of brisket is cut up pretty small. Bring the cream cheese in (after 75 minutes) and mix with the brisket, until smooth as possible.

  7. Stuff the jalapeños with the cream cheese/brisket mixture, and now wrap a strip or two of bacon around each jalapeño.

  8. Take the "Meat Church" BBQ rubs and shake all over the top of each jalapeño.

  9. Put the stuffed and bacon wrapped "Meat Churched" jalapeños back in the 250-degree smoke or oven, for 90 minutes.

  10. Pull and enjoy one of the best appetizers ever!
