Ruth Roach’s Cast Iron Cornbread


Ruth Roach ran away from home to join the 101 Ranch Wild West Show as a trick rider. Dubbed the “Soft-Spoken, Rough-Riding Golden Girl of the West,” she wore trademark giant hair bows and boots hand-tooled with hearts.
Ingredients
- ¾ cup yellow cornmeal
- ¾ cup all-purpose flour
- 2 teaspoons baking powder ½ teaspoon baking soda
- 1 teaspoon fine sea salt
- ½ cup salted butter melted 1 cup whole milk
- ¼ cup sour cream
- 2 eggs
- ¼ cup granulated sugar ¼ cup honey
Directions
- Preheat oven to 400° F.
- Use a seasoned 10 in. cast iron skillet.
- In a medium bowl, mix cornmeal, flour, baking powder, baking soda, and salt.
- In a large bowl, whisk melted butter, sugar, and honey.
- Add milk, sour cream, and eggs; whisk until smooth. Stir in dry ingredients, then fold in corn kernels.
- Pour into prepared dish and bake 20-25 minutes, until golden and a toothpick comes out clean.
