Ruth Roach ran away from home to join the 101 Ranch Wild West Show as a trick rider. Dubbed the “Soft-Spoken, Rough-Riding Golden Girl of the West,” she wore trademark giant hair bows and boots hand-tooled with hearts.

Ingredients

  • ¾ cup yellow cornmeal
  • ¾ cup all-purpose flour
  • 2 teaspoons baking powder ½ teaspoon baking soda
  • 1 teaspoon fine sea salt
  • ½ cup salted butter melted 1 cup whole milk
  • ¼ cup sour cream
  • 2 eggs
  • ¼ cup granulated sugar ¼ cup honey

Directions

  1. Preheat oven to 400° F.
  2. Use a seasoned 10 in. cast iron skillet.
  3. In a medium bowl, mix cornmeal, flour, baking powder, baking soda, and salt.
  4. In a large bowl, whisk melted butter, sugar, and honey.
  5. Add milk, sour cream, and eggs; whisk until smooth. Stir in dry ingredients, then fold in corn kernels.
  6. Pour into prepared dish and bake 20-25 minutes, until golden and a toothpick comes out clean.
