Oktoberfest Beef Stew
Oktoberfest Beef Stew is a hearty, flavorful dish perfect for celebrating the cozy flavors of fall. This rich stew combines tender beef chunks with sautéed onions, garlic, carrots, and a splash of Guinness Extra Stout for a deep, robust flavor. The addition of pitted prunes adds a subtle sweetness that perfectly balances the savory broth and beer base. Slow-simmered in a Dutch oven, this stew is ideal for enjoying with a side of creamy mashed potatoes, making it the ultimate comfort meal for chilly days and festive gatherings.
Ingredients
- 1 medium onion, chopped
- 3 tablespoons oil
- 1 clove garlic, minced
- 1 ½ pounds stew beef (1-inch chunks)
- ¾ cup flour
- 2 ½ cups beef broth
- 1 (8-ounce) Guinness Extra Stout beer
- 1 cup sliced carrots
- 2 bay leaves
- 1 cup chopped pitted prunes
Instructions
- In a large Dutch oven, sauté onion in oil for 5 to 7 minutes, adding garlic the last few seconds of cooking time.
- Remove onions and garlic; set aside.
- Add meat to Dutch oven and brown.
- Sprinkle with flour and reduce heat to a simmer.
- Mix flour with meat until well coated.
- Add broth and beer and heat to a nice simmer.
- Add onion mixture, carrots, and bay leaves.
- Simmer 1 hour, stirring occasionally.
- Add prunes and continue to simmer for ½ hour.
- Remove bay leaves before serving.
*Note: Pairs great with mashed potatoes.
