Chief Iron Tail

Named in honor of Chief Iron Tail, an Oglala Lakota leader and performer connected to the Miller Brothers 101 Ranch Wild West Show, this cast iron skillet squash recipe recognizes the Native people who were part of the 101 Ranch story. Squash has long been an important food in many Native food traditions, making this hearty skillet dish a nod to the history, culture and people of the Plains.

Ingredients

  • 2 Tbsp butter
  • 2 Tbsp avocado or vegetable oil
  • 2 lbs mixed summer squash or zucchini, sliced thin or cubed
  • 1 medium onion, chopped
  • 2 cups corn kernels, drained (Shoepeg corn is ideal, but any works)
  • ½ a jar of drained, chopped roasted Sadies of New Mexico Green Chile
  • ½ tsp salt, or to taste
  • Up to ¼ cup half-and-half if you want it creamy but this is optional.
  • 1 cup grated Monterey Jack or Mozzerella 

Directions

  1. Lightly salt sliced squash and let drain on paper towels 15–20 minutes. Pat dry.
  2. Heat cast iron skillet over medium heat. Add oil and butter and sweat the onions until they are translucent. Add the squash, stirring often, until squash softens and begins soften and brown
  3. Add in corn, green chile and salt. Cover and cook until vegetables are tender.
  4. Add half-and-half if desired and simmer briefly until reduced. Top with cheese just before serving.
