Geronimo’s Apache Trail Beans


In 1905, Geronimo was the star of the first 101 Ranch Wild West Show in Oklahoma, riding into the arena before 65,000 spectators and even driving a car in a staged buffalo hunt. Known for his bold spirit and resilience, Geronimo captivated crowds across the country.
Ingredients
- 2 cups of rinsed pinto beans
- 2 cloves garlic, minced
- 4 tbs of red chile powder Chimayo style OR
- 4 tbs of New Mexico Red Chile Oil
- ½ tsp oregano
- Salt
- 2 tbs of bacon fat
Directions
- Simmer beans in a large cast iron dutch oven or bean pot (about 4-5 hours).
- Sauté the minced garlic in bacon fat.
- Add to finished beans (still simmering) and then add the red chile powder or oil.
- Salt to taste.
