Fire & Ice Pickles
If you’re looking to spice up your pickle game, this recipe for Fire & Ice Pickles is just what you need. With only three simple ingredients—hamburger dill pickles, white cane sugar, and Tabasco sauce—you can transform ordinary pickles into a sweet and spicy treat that's perfect for snacking or as a sidekick to your favorite BBQ dishes. Inspired by the famous pickles from Luling City Market Real Bar-B-Que in Houston, Texas, these pickles pack a punch of flavor that gets better with time, whether you store them on the counter or in the fridge for an extra crunch.
Ingredients
- 1 Gallon sliced hamburger dills
- 5 lbs. White Cane Sugar
- 1 (2 oz.) bottle of Tabasco Sauce or equivalent
*Note: Recipe makes 1 gallon of Fire & Ice Pickles.
Instructions
- Drain the pickles in a very large colander for about 5 minutes.
- Meanwhile, mix the sugar and Tabasco in a larger bowl.
- Place a layer of pickles back into to the bottom of the jar and follow it with a layer of the sugar mixture, using a large sturdy spoon to push each layer down.
- When finished, shake the jar or turn it up and down a few times.
- Set on your counter.
- Turn the next day.
- Repeat for several days until the pickles turn transparent (probably 5 days).
- The pickles are ready to eat after a few days.
*Note: The longer the pickles stay in the sugar marinade, the better they become! You can store them on the counter or in the refrigerator. When stored in the refrigerator, they get extra crunchy!
